Cauliflower Cordon Bleu

Cauliflower Cordon Bleu- THM S

Ingredients

  • 1 16oz bag Riced Cauliflower or whole frozen Cauliflower
  • 1.5-2 lbs Boneless Ham Diced
  • 3-4 Chicken Breasts Cooked and Shredded
  • 1/4 Cup Butter
  • 3 Cups Heavy Cream
  • 5 T Mustard I used Dijon
  • 1 t Crushed Garlic
  • 1 t Gluccie
  • 1 egg yolk
  • 1 block Swiss Cheese Grated. I do this in my food processor
  • 1 Cup Parmesan Cheese

Instructions

  1. Place Cauliflower in greased pan.

  2. Top with Shredded Chicken and diced ham.

  3. Make the cream by heating the butter and cream.  Add the mustard to the pan and garlic.

  4. Remove from heat and sprinkle with Gluccie and whisk it in well.  

  5. Allow to cool a little then add in the egg yolk.

  6. As the mixture sits it will thicken.  If not add more Gluccie.

  7. Sprinkle the ham and chicken with salt and pepper to your taste and then cover in the cream sauce.

  8. Top with both Cheeses and bake at 350 for 30-45 mins.

  9. This is a great one to broil for the last few minutes too!
